Groundnut Soup

Ingredients
Cooking Instructions
- Clean & wash fish/chicken
- Add spices in to fish/chicken and fry using cooking oil.
- Mix groundnut with water in a bowl.
- Remove the top layer of the pepper/ball tomatoes that looks like a stick, wash & slice.
- First pound pepper and secondly add the wash ball tomatoes and pound them together. Make sure you pound them with care for it not to reach your eyes.
- Remove the first & second layer of the onions, wash and then slice.
- Peel the garden eggs, slice and rub with salt to remove the bitterness. Rises it 3times to remove the seeds.
- Wash, slice,add spices to meat and leave it to boil for 3mins.
- Note: The frying pan that you used to fry fish/chicken is not the one you are going to use in preparing the soup. You are only going to use the remaining oil left from frying fish/chicken.
- Pour the remaining oil left from frying fish/chicken into the pot you intend to prepare the soup.
- Wait until the oil is hot before putting the washed garden eggs. leave it for half a min and then stir.
- Add the slice onions and cover it for 1min and stir it again. After the garden eggs and onions have cooked, you can then add the cooked meat for it to fry together with the garden eggs/ onions.
- Add pounded pepper/ball tomatoes and Maggie for the sauce to be tasty.
- When the sauce is ready, add the mixed groundnut with water to the sauce and leave it to boil for 4mins, the pot must be covered half way for the groundnut not to float.
- When the groundnut has cooked( i.e. there is no foam in the soup, only oil) you can then add the Fried fish/chicken in to the soup and leave to boil for 2min and then add the tin tomato to give it nice color and a little bit of sour taste.
- Have a taste of the soup to know if the spices are enough, if they enough for you liking and the tin tomato have mixed properly with the soup, then it is ready to eat.
