Krain-Krain Soup

  • Wash krain- krain leaf properly with water and slice.
  • Remove the fresh dry fish skin from it bone.
  • Peel 2garden eggs, slice, rub with salt and rinse 3times with water to remove the bitterness and seeds from the garden eggs.
  • Remove the top layer of the pepper that looks like stick; wash it in a bowl and pound.
  • Remove the first and second or at time even the third skin of onions, wash, slice and pound together with the pepper/Ogiri.
  • Sometimes instead of meat, we use cow skin or both, it depends on what you prefer (Cow skin/meat).
  • If you are using Cow skin, you will need to clean it properly with knife and water to remove the sand; after that slice and put it in a pot, add salt and put it on the stove to boil for 6mins.
  • For meat, you need to wash, slice, add 2cube Maggie and put it on the stove to boil 3mins.
  • Check the meat/cow skin if it has cooked. If it has cooked, remove the meat/cow skin from the pot.
  • Wash the pot that you are going to use to prepare the sauce, put in the cooked cow skin/meat, fish, 1Maggie, a little bit of salt, cooked beans and add the water from the cooked meat.
  • Put the pot on the fire, leave it to boil for 1min and add 3pints of palm oil.
  • Note: The sauce that you are preparing needs a lot of palm oil depending to the quantity of sauce you are preparing.
  • Check if the water has reduced, because the sauce you are preparing don’t need a lot of water.
  • When there is a little bit of water remaining, add the krain- krain, pounded pepper, onions, Ogiri and leave it to steam for 1min, the stir it for the ingredients to mix with the krain -krain leaf & leave it again to steam in a low flame.
  • Check it frequently for the sauce not to get burnt. Have a taste of the sauce to know if the spices are enough, if they are enough as for your taste, cover it to steam again.
  • After 2mins of steam, check if the ingredient has cooked, including the krain -krain leaf and only the palm oil is showing.
  • If the leaf has cooked, water dry down and only the palm oil is on top of the sauce, then the sauce is ready to eat.
